At first, we thought that the Atelier was just a way to help the farm survive.
While the farm remains central in everything we do, the Atelier d’ORée also became a tale of passion.
Now, it is about true butchers-artisans that still work whole animals nose-to-tail, knife, cleaver and pounder in hand. This type of butchery reduces food waste and gives you access to cuts and parts of an animal that you can find nowhere else, and has nothing to do with industrial food processing.
It is about a deep understanding of our products and about continuously honing our skills to make the best possible use of every part of an animal and thus honor its ultimate sacrifice, and about coupling back to the farm to improve its practices, to get better marbling for example.
It is also about transforming meat in delicious sausages, smoked products, or charcuteries without cutting corners.
Our passion is to deliver the purest meat with the best possible flavour, from the best possible animals.

Terroir
Terroir is about flavors and subtle distinctions between regions.
It is the flavour of the landscape, the taste that rises from the raw earth, flows through the pasture grasses, and bleeds into the meat. You can taste the force of nature.
If you try, I bet that you can taste how do we treat the earth, how we feed and treat the animals, and how we process meat.
Nothing is more important to us than knowing where our meat is from and how it was raised.
Respect for the land and the animals ties it all together.

True butchery is a craft that is nearly extinct. It’s about reconciling traditional values and modern techniques.
This wonderful trade can only survive if we stay true to the essence and purity of our product.
Butchery is also about dexterity. About the hands of men and women who master their métier, who create things, who transform raw material and turn it into something, using nothing but their hands.
